We offer two types of Mizutaki hotpot: clear broth and white broth.
The condensed richly flavored white broth is prepared by simmering chicken bones all day long and contains plenty of collagen that is said to help maintain healthy skin.
Enjoying the white broth with a pinch of salt first is Shinmiura’s way to enjoy Mizutaki.
Next is to try the chicken. Don’t add vegetables to the hotpot yet. Just enjoy chicken with our homemade ponzu (citrus) sauce. We only use fresh young male chicken. Please enjoy the soft texture of the chicken.
Now put vegetables into the full flavored hotpot broth. The taste gradually changes by adding vegetables as if you were having a full course meal that includes different types of dishes.
After finish eating the vegetables, we simply pour the leftover soup over rice like Ochazuke (cooked rice and green tea), a Japanese dish. This differs from the usual egg and rice added to the left over soup.

Shinmiura was founded in 1912. Back then, people were forbidden from eating pork and beef.
The history of Mizutaki Hotpot began in 1909 when the railway line was extended to the south areas of Kyushu and the delicious chicken of southern Kyushu was available in Fukuoka.
As Fukuoka developed as a commercial city, it attracted many people from areas across Japan.
Over the last century, Mizutaki Hotpot has become one of the most famous dishes of the city.
